Together we’ll be bringing you the absolute pinnacle of Australian Wagyu.
Get ready for the grand unveiling of our 70+ Day Tallow-Aged Stone Axe Wagyu Rib Eye.
Stone Axe are back-to-back Australian Wagyu grand champions and the 9+ Score Japanese Black Wagyu they’ve sourced for us from their beautiful high-altitude farms in Victoria and NSW is as good as it gets.
But we’re taking it to an even higher level.
200kg of the country’s finest Full-Blood Wagyu rib eye sets left to rest for 21 days with our friends and dry-ageing specialists Vic’s Meat, before being painstakingly wrapped in beef tallow over the course of three days. The layer of beef fat protects what lies within and allows the subtleties and flavours to develop even further inside. We can’t wait for the big reveal and for these incredible steaks to hit the Meatmaiden grill. Even we can’t describe at this point how good this cut is going to be.
